To make our Low FODMAP Sweet Potato Hash and Fried Eggs Recipe, follow these steps:

  1. Preheat oven to 375°F.
  2. Toss sweet potatoes in 1 tbsp olive oil and Casa de Sante Lemon Herb Seasoning then place evenly on a baking sheet.
  3. Bake for 20 minutes or until sweet potato is soft. In medium skillet over low heat add the rest of the oil.
  4. Crack eggs one at a time into the oil and allow to cook until egg whites are solid and cooked through.
  5. Add the sweet potato to a platter then add eggs on top.
  6. Sprinkle salt and pepper over eggs and garnish with cilantro.


    Serves 2-3
