Ingredients:
To make our Low FODMAP Indian Vegetarian Poha Rice Flakes with Potato Recipe, you will need the following:
- ½ cup brown rice flakes
- 1 medium potato, boiled and chopped
- ¼ cup shredded carrots
- ½ cup baby spinach, chopped finely
- 1 Tomato, chopped finely
- 1 jalapeno, cored, chopped
- 1 tsp. Mustard powder/paste
- Casa De Sante Spicy Indian Seasoning
- 1 cup Lettuce
- Gluten Free brown rice tortilla
- Olive oil for cooking
Preparation:
To make our Low FODMAP Indian Vegetarian Poha Rice Flakes with Potato Recipe, follow these steps:
- Boil the potato, about 20-25 minutes. Remove, let cool and chop into about 1” cubes.
- Rinse the brown rice flakes under water and then let it soak in water in a bowl for about 5 minutes.
- Meanwhile on a medium heat stove, lightly stir fry the jalapeno and spinach with 1 tsp. Casa De Sante Spicy Indian Seasoning and 1 tsp. mustard paste or powder.
- Once slightly wilted, add the finely chopped tomatoes and potato and cook about 5 minutes.
- Next add the brown rice flakes and another teaspoon of Casa De Sante Spicy Indian Seasoning and 1 tsp. of mustard paste or powder.
- Gently break up any lumps and cook for 3-5 minutes on medium heat, tossing frequently.
- Serve hot with a cup of chopped lettuce and a warm GF tortilla.
