Cooking Instructions
1. Preheat oven to 400 degrees F. Pat dry 4 chicken thighs with a paper towel and season generously with salt and pepper.
2. Melt 2 Tbsp butter in a large skillet over medium high heat. Brown the chicken on both sides, about 8 minutes in total. Remove from pan and set aside. Drain excess fat from the pan.
3. Place chicken, skin-side up, into a greased baking dish. Place in the oven and roast until cooked through, about 25-30 minutes. Drain excess fat.
4. In the skillet, melt the remaining 2 Tbsp butter over medium heat. Add 8 oz sliced mushrooms and 2 chopped garlic cloves. Cook until softened, about 5 minutes.
5. Gradually whisk in 1 cup heavy cream, 3 sprigs thyme, 1 tsp paprika, and ½ tsp cayenne powder. Season with salt and pepper. Cook, whisking constantly, until the sauce starts to thicken, about 3-4 minutes.
6. Serve chicken immediately with mushroom sauce. Sprinkle with chopped parsley.
