4 Chicken Thighs
2 Tomatoes
8 Red Potatoes
4 Tsp Ginger
1 Tsp Red Pepper Flakes
6 cloves Garlic

Cooking Instructions
1. Combine 4 tsp minced ginger, half of the minced garlic, 1 tsp red pepper flakes, salt, and pepper to taste in a small bowl. Rub dry seasoning mixture over 4 chicken thighs.
2. Heat olive oil in a skillet and brown chicken.
3. Add 2 quartered tomatoes and simmer for about 25 minutes, until the chicken is no longer pink inside on medium heat, flipping from time to time.
4. While chicken simmers, place 8 potatoes in a large pot and add enough water to cover. Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
5. Remove pot from heat and drain. Mash potatoes with a potato masher or fork and mix in remaining garlic, salt and pepper to taste and olive oil or milk, (optional).
6. Once chicken is done, serve alongside mashed potatoes.
