- 2 eggs
- 1 zucchini small
- 1 carrot
- 100 g mozzarella
- half sweet pepper
- 1 tbsp poppy seeds
- 1 tbsp Casa de Sante Italian Tuscan Herb mix
Place two eggs in a bowl, add zucchini grated and squeezed, mozzarella, sweet peppers, grated carrot, poppy seeds and Tuscan herbs.
Mix all together.
Prepare cups for muffins, brush them with a little oil.
Put the mixture in the cups.
Preheat the oven to 190 degrees and then put the cups in for 15 minutes.
After they are nicely browned remove them from oven.
Best served with tomatoes and mozzarella.
