Panna cotta is a traditional Italian dessert made from sweetened cream that is thickened with gelatin. This is a modified version of the traditional recipe that is safe for those on a low-FODMAP diet. In fact, this recipe is also dairy-free, gluten-free, and vegan. That doesn’t mean it’s lacking in flavor, though.

Spiced Panna Cotta with LemonAID, (Ayurvedic herb and spice lemon infusion)

Serves 3


1 (13.5 ounce) can full-fat coconut milk, divided

½ cup LemonAID Ayurvedic herb and spice lemon infusion (mild)

1 ½ teaspoons unflavored gelatin

3 tablespoons pure maple syrup

1 teaspoon vanilla


Pour 1 cup of coconut milk into a small saucepan. Sprinkle unflavored gelatin evenly over the milk and let it sit for 5-10 minutes. Warm milk over medium heat, stirring constantly, until it starts to steam but do not let it come to a boil. Blend the remaining coconut milk, LemonAID Ayurvedic herb and spice lemon infusion, maple syrup, and vanilla into the warm milk. Remove from the heat and let it cool for about 10-15 minutes. Be sure the mixture is cool and mixed well before refrigerating. Divide mixture into 3 small bowls and cover tightly with plastic wrap. Let it set in the refrigerator for about 4-5 hours. Panna cotta should be the consistency of a thick pudding once it is ready.
