Low FODMAP Protein Granola (makes 4 servings)
Ingredients
1/4 cup almond butter
1/4 cup maple syrup
1 tsp vanilla extract
2 cups oats
1/2 scoop vanilla (or chocolate) Casa de Sante low FODMAP protein powder
1 tsp cinnamon
1/4 tsp salt
1/3 cup sliced almonds
1/3 cup vegan/dark chocolate chips
Low FODMAP yogurt (for serving)
Strawberries (for serving)
Instructions

Preheat oven to 325F, spray a large baking tray with nonstick cooking spray.

In a small saucepan, add almond butter and maple syrup together over medium heat. Stir until it forms a smooth mixture without any clumps, and then stir in the vanilla extract.

Remove from the heat and add in the oats, vanilla protein powder, cinnamon, and salt. Mix together, and make sure all the oats are nicely coated with the almond butter mixture.

Pour the granola onto your baking sheet and spread out evenly - if you want a clumpier granola, then don’t spread it out too much.

Bake for 5 minutes. Remove from oven, stir the granola, and then bake for another 8-10 minutes or until golden brown.

Let the granola cool to room temperature before adding in your almonds and chocolate chips, and then serve with yogurt and berries.
