Sage-Rubbed Pork with Delicata Squash and Kale Recipe

1 lb Pork Chop
3 Sages
2 Delicata Squashes
½ Red Onion
1 Tbsp Brown Sugar
2 Tbsp Garlic
½ bunch Kale
¼ cup Chicken Broth

 

From your pantry

1 Oil
1 Salt And Ground Black Pepper


Cooking Instructions

Sage-Rubbed Pork 1


1. Combine 1 Tbsp brown sugar, 2 cloves minced garlic, 3 chopped sage leaves, ½ Tbsp salt, and pepper to taste in a small bowl. Pierce pork with a fork, and rub sage mixture all over. Set aside.

2. Toss 2 sliced delicata squash and ½ sliced red onion with 1 Tbsp olive oil and 1 tsp salt and pepper. Roast on a 450 degree oven for 20 minutes.

3. While squash roasts, heat a skillet over medium-high heat. Add 1 Tbsp oil and sear pork until cooked through, about 3 minutes on each side. Remove from skillet and set aside.

4. To the same skillet, add 1 Tbsp olive oil and add ½ bunch sliced kale.

5.Add ¼ cup chicken broth to the skillet, scraping up the pork bits with your spoon. Simmer for 4 minutes and season with a pinch of salt.

6. Slice pork and serve alongside roasted squash, onions, and sauteed kale.
