Herbed Crusted Cod Recipe
The fragrant crunch of the herb-crust contrasts deliciously with the flakiness of the cod in this hearty family favourite.

Ingredients:
- 4 pcs Cod
- 1 Lemon
- 1 Tbsp Parsley
- ½ cup gluten free breadcrumbs
- 1 bunch asparagus
- 1 Garlic Oil
- 1 Salt And Ground Black Pepper
Herbed Crusted Cod Cooking Instructions
1. Preheat oven to 400 degrees. Season both sides of cod with salt and pepper.
2. To a medium baking dish or oven proof skillet, pour 3 Tbsp garlic oil, juice from 1 lemon, ¼ tsp salt. Stir gently to combine, then set aside.
3. To prepare the herb crust, combine zest from 1 lemon, 1 Tbsp parsley, ½ cup gluten free breadcrumbs, a pinch of asafetida, and ½ tsp salt in a small bowl.
4. Dredge the cod fillets in the garlic oil and lemon mixture on both sides. Bake for 4 minutes. Spoon a bit of the herb mixture on the tops of each cod fillet and bake for 15 minutes, or until cooked through.
5. While the cod bakes, heat a skillet over medium heat and add 1 Tbsp garlic oil. Add 1 bunch trimmed asparagus and 2 tsp salt to the skillet and saute for 8 minutes, turning occasionally.
6. Sprinkle a spoonful of the herb mixture over asparagus and serve alongside cod.
