BBQ Mashed Sweet Potatoes
Serves 4
2 large sweet potatoes, peeled and cubed
2 tablespoons ghee or butter
½ teaspoon salt
1 tablespoon Casa de santé BBQ Rub
Directions:
Place a steamer basket in a saucepan filled with about 1-2 inches of water and heat to a boil. Place the cubed sweet potatoes in the pan, cover, and steam for 20 minutes or until the potatoes are tender. Remove potatoes from pan and place in a large bowl. Add ghee or butter, salt, and Casa de santé BBQ Rub and mash with a potato masher or mixer. Add more Casa de santé BBQ Rub seasoning if a spicier flavor is desired.
