Low FODMAP Bacon Wrapped Carrots with Maple Glaze Recipe

  1. Preheat oven to 400°F. Line a large baking sheet with greased parchment paper.
  2. Blanch carrots in a large saucepan of boiling water for 2 mins and rinse under cold water. Gather carrots into a bundle and wrap with 2 strips of bacon. 
  3. Transfer carrot bacon bundle to prepared baking sheet. Bake for 15-20 mins or until browned.
  4. For the glaze, drizzle the maple syrup over hot carrot bundles and serve immediately.
