Miso and Soy: Yaki Udon

2 cups Udon
½ Onion
1 Carrot
1 box Shiitake Mushrooms
2 stalks Green Onion
½ lb Beef
3 Tbsp Soy Sauce
3 Tbsp Mirin
2 Eggs

From your pantry

1 Oil
1 Salt And Ground Black Pepper


Cooking Instructions



1. Cook the udon noodles according to package directions. Set aside.



2. Heat a skillet over medium heat and add 1 Tbsp oil. Add 2 cloves minced garlic and saute for 2 minutes. Then add ½ onion, 1 sliced carrot, 1 pack sliced mushrooms, and ½ lb sliced beef. Cook for 2-3 minutes.



3. Add the drained noodles to the skillet.



4. Season with 3 Tbsp soy sauce, 3 Tbsp mirin, and a generous amount of salt and pepper.



5. Turn the heat off, and add 2 sliced green onions.



6. Heat 1 Tbsp oil in a skillet and crack 2 eggs. After 2 minutes, gently flip and cook for another 2 minutes. Divide udon onto two plates and top each with a fried egg.
