INGREDIENTS
To make our Low FODMAP Coconut Curry Salmon Recipe, you will need the following:- 2 salmon fillets
- ½ (13.5oz) can coconut milk
- 2 tbsp Casa de Sante low FODMAP Certified Thai Curry seasoning
- 4 tablespoons peanut butter, no sugar added
- 150g (1.5 cups) whole broccoli.
- 1 tsp salt
- 1 tsp pepper
INSTRUCTIONS
To make our low FODMAP Coconut Curry Salmon Recipe, follow these steps:
- Preheat oven to 375° F.
- In a small sauce pan over low heat, add coconut milk, Casa de Sante Thai Curry seasoning and peanut butter.
- Stir until smooth then remove from heat.
- Grease a baking sheet and add salmon filets.
- Bake in oven for 15-20 minutes or until cooked through.
- Meanwhile, boil a pot of water and steam broccoli.
- Once salmon is cooked, drizzle coconut curry sauce on top and garnish with salt and pepper.
- Serve with 150g (1.5 cups) whole broccoli.
