To make our low FODMAP Coconut Curry Salmon Recipe, follow these steps:

  1. Preheat oven to 375° F.
  2. In a small sauce pan over low heat, add coconut milk, Casa de Sante Thai Curry seasoning and peanut butter.
  3. Stir until smooth then remove from heat.
  4. Grease a baking sheet and add salmon filets.
  5. Bake in oven for 15-20 minutes or until cooked through.
  6. Meanwhile, boil a pot of water and steam broccoli.
  7. Once salmon is cooked, drizzle coconut curry sauce on top and garnish with salt and pepper.
  8. Serve with 150g (1.5 cups) whole broccoli.
