2 cups Broccoli
5 cups Spinach
1 Green Onion
2 French Rolls

Cooking Instructions
1. Set oven broiler to high. In a large bowl, whisk together 2 whole eggs, 4 egg whites, 3/4 cup cheese, 1 Tbsp water, salt, pepper, dash of hot sauce; set aside.
2. Steam or lightly saute the 2 cups broccoli, 2 cups spinach, and 1 chopped green onion for 3 minutes, until slightly tender. Season with salt and pepper. Set aside and allow to cool slightly.
3. Add the sauteed veggie mixture to the egg mixture. Combine gently, so that egg does not get cooked by the heat from the veggies. Add the toasted bread cubes to the egg and veggie mixture.
4. Heat a large, oiled, oven-safe skillet over medium heat. Add entire mixture to skillet and let set for 3 minutes; don’t stir or move mixture. Use a spatula to lightly lift mixture from the edge the pan, to ensure it won’t stick.
5. Jiggle the skillet to ensure the mixture has set; the middle can still be slightly runny. After the sides and bottom of mixture have set, add the remaining cheese on top of the mixture and place the skillet in your broiler.
6. Broil until the top is totally set (the middle doesn’t jiggle) and the cheese is golden brown, about 5-7 minutes. Top with hot sauce, and salt and pepper to taste, add a fresh tomato if desired.
