4 oz Soba
1 cup Haricots Verts
2 Tbsp Lime
1 Tbsp Sesame Oil
¼ cup Cilantro
2-6 oz Salmon Fillets
2 Tbsp Soy Sauce

 

From your pantry

1½ Tbsp Hot Sauce
Salt And Ground Black Pepper
2 Tsp Oil

Cooking Instructions

 



1. Cook 4 oz of soba noodles according to package. Rinse with warm water, drain, and set aside. Bring a saucepan of water to a boil. Add 1 cup haricot verts and cook for 2-3 minutes. Remove from heat and strain well. Cover and set aside.

 



2. Combine 2 Tbsp soy sauce, 2 Tbsp lime juice, 1½ Tbsp hot sauce (optional), and 1½ Tbsp sesame oil in a medium bowl. Divide the mixture into two bowls.

 


3. Combine haricot vert with soba noodles and half of the sauce mixture; cover to keep warm.

 



4. Coat 2 salmon steaks with oil and sprinkle with salt and pepper to taste. Add the salmon to a shallow bowl with the rest of the soy mixture and leave to marinate for 10 minutes.

 



5. Heat a nonstick skillet over medium-high heat. Add oil to skillet; swirl to coat. Add salmon and cook for 5 minutes on each side or until desired degree of doneness. Do not cook for longer than 8 minutes.

 



6. Slice salmon thinly against grain. Serve over noodles. Sprinkle with cilantro and sesame seeds if desired.
