Low FODMAP QUINOA VEGETABLE PILAF Recipe

Ingredients:

  • 1 1/2 cups water
  • 1 cup quinoa
  • 2 tablespoons Casa de santé Indian Spicy Hot Seasoning
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • Pinch of turmeric
  • ½ cup peas
  • ½ cup shredded carrots
  • ½ cup diced red pepper
  • 1 tablespoon lemon juice

Directions:

  1. Rinse quinoa in water.
  2. Combine quinoa, water, 1 tablespoon olive oil, ½ teaspoon salt, and turmeric in a pan.
  3. Bring to a boil; cover and reduce heat to low.
  4. Simmer until quinoa is tender and water is absorbed (about 15 minutes).
  5. Meanwhile, heat 1 tablespoon olive oil in another pan over medium heat.
  6. Add peas, carrots, red pepper, Casa de santé Indian Spicy Hot Seasoning, and ½ teaspoon salt.
  7. Cook until vegetables are tender but firm.

    Serves 4
