The Complete Menu

The Turkey

Turkey is naturally zero FODMAP. The risk comes from what goes IN and ON the turkey:

  • Safe brine: Salt + water + maple syrup + bay leaves + peppercorns + thyme. Brine overnight.
  • Safe herb butter: Softened butter + fresh thyme + rosemary + sage + salt + pepper + 1 tbsp garlic-infused olive oil. Rub under and over the skin.
  • Skip the stuffing INSIDE the bird: Cook stuffing separately (see below).
  • Roast at 325°F: 13-15 minutes per pound. Internal temp 165°F in the thickest part of the thigh. Rest 30 minutes before carving.

Low FODMAP Stuffing

4 cups cubed sourdough bread (toasted) or GF bread + 2 stalks celery (diced) + 1 cup carrot (diced) + 3 tbsp garlic-infused olive oil + 2 tbsp butter + 1/2 cup green onion tops (sliced) + 1 tsp sage + 1 tsp thyme + 1 cup chicken broth + salt + pepper. Sauté vegetables in garlic oil and butter. Toss with bread cubes and herbs. Moisten with broth. Bake 350°F 30 minutes uncovered.

Mashed Potatoes

3 lbs Yukon Gold potatoes (peeled, cubed). Boil until fork-tender (20 minutes). Drain. Add 4 tbsp butter + 1/2 cup lactose-free milk + 2 tbsp garlic-infused olive oil + salt + pepper. Mash until smooth. Do NOT add raw garlic or sour cream.

Cranberry Sauce

1 bag (12 oz) fresh cranberries + 1/2 cup maple syrup + 1/2 cup water + zest of 1 orange. Simmer 15 minutes until cranberries pop. Mash slightly. Chill. Fresh cranberry sauce is naturally low FODMAP, unlike canned versions with HFCS.

Roasted Vegetables

Carrots + parsnips (limit to 1/2 cup) + potatoes + green beans. Toss with olive oil, salt, pepper, thyme. Roast 400°F 35 minutes. Simple and universally loved.

Gravy

Pan drippings from the turkey + 2 cups chicken broth + 2 tbsp GF flour (or cornstarch slurry) + 1 tbsp garlic-infused olive oil + salt + pepper. Strain the drippings to remove solids. Whisk in flour. Add broth gradually while whisking. Simmer until thickened. Season. No onion, no garlic — just turkey flavor.

Green Bean Casserole (Modified)

1 lb fresh green beans (blanched) + 1 cup lactose-free cream + 2 tbsp garlic-infused olive oil + 1/4 cup Parmesan + salt + pepper. Top with GF breadcrumbs mixed with melted butter. Bake 375°F 25 minutes. Skip the traditional cream of mushroom soup (contains onion, garlic, lactose).

Pumpkin Pie

GF pie crust (store-bought or homemade with GF flour) + 1 can (15 oz) pumpkin puree + 2 eggs + 3/4 cup maple syrup + 1 cup lactose-free cream + 1 tsp cinnamon + 1/2 tsp ginger + 1/4 tsp nutmeg + 1/4 tsp cloves + pinch salt. Pour into crust. Bake 425°F 15 minutes, then 350°F 40-50 minutes until set. Cool completely.
