Modern Asian: Ginger Shrimp Tostadas

12 oz Shrimps
3 Radishes
1 Tbsp Soy Sauce
½ Tbsp Ginger
2 stalks Green Onion
½ Tbsp Rice Vinegar
6 Tortillas
1 Avocado
2 Tsp Brown Sugar
1/4 head Cabbage

1 Oil
1 Salt And Ground Black Pepper


Cooking Instructions


1. Preheat oven to 350 degrees. Brush or drizzle ½ tsp oil on each tortilla, then arrange on a baking sheet in a single layer. Season with salt and pepper to taste. Bake until crisp, about 10 minutes, keeping a close eye on them so they don’t burn.



2. Meanwhile, mash 1 avocado, 2 sliced green onions (use the white portion of the onion and reserve the green stems for later), and salt and pepper to taste in a small bowl.



3. Combine 1 Tbsp soy sauce, ½ Tbsp chopped ginger, ½ Tbsp rice vinegar, and 2 tsp brown sugar in a small bowl. Place 12 oz shrimp in a shallow dish and pour marinade over, then season with salt and pepper to taste. Set aside for 20 minutes to 2 hours.



4. Heat a skillet over medium heat and add 1 Tbsp oil. Saute shrimp for 3-4 minutes, or until they turn pink and opaque.



5. To assemble the tostadas, spread avocado mixture, top with a bit of cabbage, then arrange a spoonful of shrimp. Top with thinly sliced radishes and the reserved green onion stems.
