Ingredients

To make our Low FODMAP Italian Pasta Salad, you will need the following:

Dressing

Pasta salad

  • 1 cup brown rice rotini
  • 8-10 quartered cherry tomatoes
  • ½ English cucumber, seeded and diced
  • ¼ cup pitted Kalamata olives
  • ½ cup crumbled feta cheese

Directions

To make our Low FODMAP Italian Pasta Salad, follow these steps:

  1. Whisk the dressing ingredients together.
  2. Season to taste with salt and black pepper then set aside.
  3. Bring a pot of water to a boil.
  4. Generously salt the water once boiling. The water should be as salty as ocean water since this adds flavor to the pasta.
  5. Drop the pasta into the water and cook 2 minutes shy of the packaging instructions.
  6. Drain and rinse the pasta under cold water.
  7. Transfer to a large salad bowl immediately. Do not leave the pasta in your colander.
  8. Add the tomatoes, cucumber, olives, and feta. Toss.
  9. Whisk the dressing once again.
  10. Pour the vinaigrette over the pasta salad ingredients and toss to coat.
  11. Serve.
