Low FODMAP Basil Curry Falafel with Curry Yogurt Dipping Sauce – Vegan Recipe

Ingredients
Serves 5 (4 falafel per serving)
To make our low FODMAP Basil Curry Falafel with Curry Yogurt Dipping Sauce, you will need the following:
For the Falafel:
- 2 tablespoons olive oil, divided
- 1 cup cooked brown rice
- 1 cup canned chickpeas, rinsed and drained
- 1 cup finely chopped fresh parsley
- 1 cup finely chopped leeks, green parts only
- 2 medium carrots, grated
- Kosher salt and black pepper
- 1 tablespoon low FODMAP basil and lemon balsamic vinaigrette dressing
- 1 tablespoon low FODMAP curry sauce
- ¼ teaspoon ground cumin
- 1/8 teaspoon dried basil
- Juice and zest of one lime
- ¼ cup gluten-free all-purpos flour
Dipping sauce
- 1 cup coconut yogurt
- 1 tablespoon low fodmap curry sauce, or more to taste
- 1 tablespoon lime juice
Directions
To make our Low FODMAP Basil Curry Falafel with Curry Yogurt Dipping Sauce, follow these steps:
- Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
- Grease the parchment with half of the olive oil and set aside.
- Add all the falafel ingredients to the bowl of a food processor except the flour.
- Process until a smooth paste is formed. Add water in tablespoon increments if needed.
- Stir the flour into the paste. Once done, it should be just dry enough to handle without sticking.
- Scoop the falafel mixture in 1 tablespoon portions then form into small patties and place onto the lined baking sheet.
- Brush the tops with oil and place into the oven to bake for 10 minutes.
- Flip and cook for an additional 10 minutes or until golden brown.
- Combine the coconut yogurt and curry sauce in a bowl with the lime juice. Whisk.
- Plate the falafel.
- Serve with the dipping sauce and enjoy.
