Low FODMAP Baked Potato with Ham and Chives Recipe

Ingredients:

  • 1 large russet Potato, baked
  • 1-2 slices of Ham (check for honey, onion, garlic)
  • Casa De Sante Tuscan Herb seasoning
  • 1 tsp. chives (fresh of dried)
  • 1 Tbsp. coconut cream
  • 1 tsp. vinegar
  • Salt and pepper to taste

Preparation:

  1. Preheat oven to 425F. To speed up the baking of the potato, place the washed potato (pierce a few times with a fork) on a microwave-safe plate, cover with damp paper towels and microwave on high for 8 to 10 minutes.
  2. Wrap the potato in aluminum foil, place potato in center of oven and bake for 20-30 minutes. Check if its cooked with the point of a knife, it should be able to
  3. pierce easily.
  4. Carefully cut the top off the potato and scoop out the flesh, place in a large bowl.
  5. Mash the potato flesh with the coconut cream, vinegar, Casa De Sante Tuscan Herb seasoning and chives.
  6. Scoop this mixture back into the potato skin and top it with roughly diced slices of ham and a pinch of chives.
  7. Season with salt and pepper and serve with a small side salad.
