Low FODMAP Baked Potato with Ham and Chives Recipe
Servings -1
Ingredients:
- 1 large russet Potato, baked
- 1-2 slices of Ham (check for honey, onion, garlic)
- Casa De Sante Tuscan Herb seasoning
- 1 tsp. chives (fresh of dried)
- 1 Tbsp. coconut cream
- 1 tsp. vinegar
- Salt and pepper to taste
Preparation:
- Preheat oven to 425F. To speed up the baking of the potato, place the washed potato (pierce a few times with a fork) on a microwave-safe plate, cover with damp paper towels and microwave on high for 8 to 10 minutes.
- Wrap the potato in aluminum foil, place potato in center of oven and bake for 20-30 minutes. Check if its cooked with the point of a knife, it should be able to
- pierce easily.
- Carefully cut the top off the potato and scoop out the flesh, place in a large bowl.
- Mash the potato flesh with the coconut cream, vinegar, Casa De Sante Tuscan Herb seasoning and chives.
- Scoop this mixture back into the potato skin and top it with roughly diced slices of ham and a pinch of chives.
- Season with salt and pepper and serve with a small side salad.
