One Pot Chicken with Sweet Potatoes Recipe

This easy and simple honey roasted chicken and sweet potatoes skillet is everything you want in a hearty, comforting Fall feast meal.

From your meal kit

1½ lb Chicken Thigh
2 Sweet Potatoes
½ Red Onion
1 bunch Broccolini
2 Garlics
1½ cups Chicken Broth

From your pantry

1 Oil
1 Salt And Ground Black Pepper



Cooking Instructions


1. Season chicken thighs with 1 Tbsp salt and pepper. In a large pot, brown chicken skin side down until golden and crispy, about 7 minutes on each side. Set chicken aside.



2. In the same pot, add 2 chopped sweet potatoes, ½ chopped red onion, and 2 cloves garlic and saute for 5 minutes. Season with salt and pepper to taste.



3. Return chicken thighs to the pot, pour in 1 cup chicken broth and bring to a boil.



4. Add 1 bunch sliced broccolini, cover pot and reduce heat to medium low and simmer for about 25 minutes.



5. Serve directly from pot, or spoon chicken and vegetables into two bowls.
