3 cups Cauliflower
3 oz Shiitake Mushrooms
2 Tsp Brown Sugar
1 Tbsp Garlic
1 Tbsp Tamari Soy Sauce

Cooking Instructions
1. Place 3 cups chopped cauliflower in a pot of boiling water for about 6 minutes. Drain cauliflower very well and pat dry with paper towels.
2. Mash cauliflower either in a food processor or with a fork until smooth.
3. Add 2 Tbsp olive oil, 1 Tbsp minced garlic, and salt and pepper to taste.
4. In a separate pot, bring the 3 oz dried shiitake mushrooms, 1 Tbsp tamari, 2 tsp brown sugar, and ½ cup of water to a boil in a small saucepan. Cover pot and reduce heat to medium-low.
5. Bring to a simmer, stirring occasionally, until mushrooms are softened and all liquid is absorbed, about 12-15 minutes.
6. Once mushrooms have slightly cooled, thinly slice and sprinkle with a bit of olive oil and sesame seeds if desired. Serve alongside mashed cauliflower.
