Low FODMAP Granola Peanut Butter Bread (Video)


1 cup Golden Turmeric Granola by Casa de Sante
1 cup Buckwheat flour
1/4 cup Walnuts
1 tsp cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon baking powder
1/2 tsp baking soda
1 cup carrot
2 eggs
1 tsp maple syrup
2 tbsp coconut oil
3 tbsp peanut butter
1 cup of almond milk
1 tbsp of lemon juice.

Put in a bowl 1 cup Granola (Golden Turmeric) by Casa de Sante, 1 cup buckwheat flour, 1/4 cup Walnuts, 1 tsp cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon cloves, 1/4 teaspoon baking powder and 1/2 teaspoon baking soda.
Mix all together. put aside.
Mix the other wet ingredients.
Put in another bowl 1 cup carrot, 2 eggs, 1 tsp maple syrup, 2 tbsp coconut oil, 3 tbsp peanut butter, 1 cup of almond milk and 1 tbsp of lemon juice.
Mix with the mixer
Put the dry ingredients over the wet ingredients, mix together and put in a tray.
Bake to the oven for 25-30 minutes at 180°C/356°F
Remove it from the oven.
Put the dark chocolate glaze and coconut on top.

  • What are the measurements on the baking soda and baking powder? Teaspoons? Also, what size pan? Loaf pan? Thanks.

  • The chocolate glaze is optional, but we can certainly add it under ingredients. You can use a low FODMAP seed butter instead of peanut butter, such as sunflower seed butter.

  • Where is the dark chocolate glaze listed under Ingredients??
    Also, could you please suggest modifications for a nut-free version of this recipe?
