One Pot Vegetarian: Hearty Italian Vegetable Soup with Pesto

From your meal kit

½ Onion
2 Carrots
2 cloves Garlic
½ Tsp Oregano, Dried
2 cups Vegetable Broth
3 cups Dinosaur Kale
1 can Cannellini Beans
¼ cup Pesto
¼ cup Parmesan
¼ cup Parsley

From your pantry

1 Tbsp Olive Oil
1 Salt And Ground Black Pepper


Cooking Instructions



1. Heat 1 Tbsp olive oil in a large pot over medium-high heat. Add ½ chopped onion and 2 sliced carrots. Saute, stirring occasionally for 5-6 minutes or until the vegetables begin to soften.



2. Add 2 cloves minced garlic and ½ tsp oregano, then cook for another 2 minutes, stirring constantly.



3. Add 2 cups vegetable broth, 3 cups chopped kale, and 1 can Cannelini beans. Bring to a boil, then reduce the heat to a simmer and cook for 15 minutes until the kale and beans are tender.



4. Once the veggies are tender, stir in ¼ cup pesto, ¼ cup Parmesan cheese, and ¼ cup chopped parsley. Stir continuously until the cheese is completely melted. Season to taste with salt and pepper.



5. Serve with additional Parmesan cheese.
