3 Italian Sausages
¼ Maui Onion
2 cloves Garlic
2 pcs Potato
3 cups Chicken Broth
½ cup Half And Half
1½ cups Spinach
1 loaf White Bread

1 Olive Oil

Cooking Instructions
1. Heat 1 tsp oil in a saucepan, add 3 sliced Italian sausage links and brown for 5-6 minutes.
2. Add ¼ chopped onion and 2 minced garlic cloves and cook for 3 minutes. Then add 2 chopped potatoes , 3 cups chicken broth, and 1 cup water. Bring to a boil and simmer for 15-20 minutes, until the potatoes are tender.
3. While soup simmers, cut 1 loaf of bread in half lengthwise and drizzle with olive oil. Toast in a 350 degree oven for 5 minutes, or until golden brown.
4. Once the potatoes are fork-tender, pour in ½ cup half and half, and a pinch of pepper. Toss in 1½ cup spinach and stir until it wilts. Bring to a boil, then turn off heat.
5. Divide soup into two bowls and serve alongside toasted bread.
