Ingredients
To make our Low FODMAP One Pan Easy Chicken Dinner Bake Recipe, you will need the following:
- 1 lb. boneless, skinless chicken thighs or breast
- 1 lb. potatoes, scrubbed and diced into 1" pieces
- 1 cup frozen green beans
- 1 cup frozen carrots
- 1 tsp. Casa De Santé Tuscan Herb
- ¼ cup sliced scallions (green onion), green part only!
- 2 tsp. Casa De Santé Vegetable stock powder
- ½ of a lemon, juiced
- Olive oil (or coconut oil)
Preparation
To make our Low FODMAP One Pan Easy Chicken Dinner Bake Recipe, follow these steps:
- Preheat oven to 380 F. Grease a large baking pan with olive oil or coconut oil.
- Place the chicken in the middle of the baking pan.
- Place potatoes on one side of the chicken and green beans and carrots on the other side.
- Whisk ¼ cup olive oil with Casa De Santé Tuscan Herb, lemon juice and Casa De Santé Vegetable stock powder.
- Drizzle this over the chicken, potatoes and vegetables. Sprinkle with the scallions.
- Tightly cover pan with aluminum foil and bake for 45 min to 1 hour, or until chicken is done and potatoes and veggies are tender.
- Serve with warm rice/quinoa and a side salad.
