Shrimp Gumbo — A Low FODMAP Recipe

6 oz Shrimps
½ Onion
2 cloves Garlic
½ can Kidney Beans
6 Tbsp Gumbo Base Mix
1 cup Rice
1 Tbsp Parsley
½ can Diced Tomatoes
1 cup Chicken Broth
4 oz Chorizoes
From your pantry
1 Oil
1 Salt And Ground Black Pepper
Shrimp Gumbo Cooking Instructions
1. Cook rice according to package instructions in a small pot.
2. In a saucepan, saute ½ chopped onion, 2 cloves minced garlic, and 1 Tbsp oil until softened, about 4 minutes.
3. Add 6 Tbsp of Louisiana gumbo seasoning to the saucepan, and stir in 1 cup chicken broth, ½ can kidney beans, ½ can diced tomatoes, 4oz chorizo and bring to a boil. Simmer for about 10 minutes.
4. Add 6 oz (half bag) shrimp and let simmer for 3 minutes, until shrimp is completely cooked.
5. Spoon 1 cup of rice into a bowl and ladle gumbo on top. Garnish with 1 Tbsp chopped parsley.
