Chorizo and Red Bean Stew Low FODMAP Recipe
A mixture of red kidney and chorizo come together to make a hearty and mildly spicy bean stew. Grab a crusty roll and tuck in.

5 oz Chorizoes
½ can Kidney Beans
½ Onion
2 cloves Garlic
1 cup Chicken Broth
1 cup Rice
1 Tbsp Parsley
From your pantry
1 Tbsp Oil
1 Salt And Ground Black Pepper
Cooking Instructions
1. Cook 1 cup rice according to package instructions.
2. In a large saucepan, heat 1 Tbsp oil. Add ½ chopped onion and stir until softened; about 5 minutes.
3. Add 2 cloves minced garlic, season with salt and pepper to taste, and cook for 1 minute.
4. Add 5 oz chorizo and cook for 2 minutes. Add ½ can kidney beans and cook for 3 minutes.
5. Pour in 1 cup chicken broth and stir to combine. Gently mash some beans to thicken the stew. Bring to a boil, and simmer for 7-10 minutes.
6. Divide rice between 2 bowls and ladle stew on top. Garnish with chopped parsley.
