Serves 10-12
One 12-14-pound ham
¾ cup maple syrup
¼ cup Casa de santé BBQ Rub
Directions:
Preheat oven to 350 degrees. Place ham on a roasting rack in a large roasting pan. Brush the ham with maple syrup (reserve some for basting later). Rub the ham with Casa de santé BBQ Rub making sure to press it into the maple syrup. Add 2 cups of water to the bottom of the roasting pan. Cover the pan with foil and bake for 1 hour. Remove the ham from the oven and remove the foil. Using the reserved maple syrup, brush onto the ham. Return to the oven uncovered and increase the oven temperature to 400 degrees. Bake for another 45 minutes to 1 hour or until a meat thermometer reads 135 degrees. Remove from the oven and let it rest for 10 minutes before slicing.
