Low FODMAP Lemon Chicken with Carrots Recipe

4 pcs Chicken Thighs
2 Lemons
1 Tsp Oregano, Dried or Casa de Sante Tuscan Herb Mix (for hing garlic-onion flavor)

16 small carrots (1-1/2 lb.), peeled
1 Tbsp Parsley
1  Garlic Oil

1 Salt And Ground Black Pepper


Cooking Instructions



1. Preheat the oven to 400F. Pat the chicken dry with paper towels, season generously with salt and pepper, then set aside.



2. Heat garlic oil on a large skillet over medium-high heat. Brown the chicken for 3-5 minutes on each side.



3. Remove the skillet from the stove. Add sliced lemons, and 1 tsp oregano  or Casa de Sante Tuscan Herb Mix, peeled carrots and 3 Tbsp lemon juice to the skillet. Bake in the oven for 40-45 minutes,.



4. Top the chicken with lemon zest and chopped parsley before serving.
