Low FODMAP Weeknight Beef Chili Recipe

For all you meat lovers out there, here's a delicious weeknight beef chili for today's dinner:

Serves 6


1 Tbsp olive oil 
1.5 cup chickpeas canned, rinsed and drained thoroughly
4 tomatoes diced
2 tbsp. tomato paste 
1 tsp Casa de Sante Chili Seasoning Mix:

4 Carrots diced
1⁄4 tsp salt (or to taste)
1 cup Nelino's Pomodoro Sauce:

18 oz lean ground beef 
1⁄2 cup hot water


1.Add 1 tbsp. olive oil to pot, and saute carrots until slightly tender.

2.Add the ground beef to the pot and continue to sauté until the beef is cooked through (5-7 minutes). Break the beef up into small crumbles with your spoon as it cooks.

3.Add the chickpeas, the diced tomatoes, tomato paste, chili powder, hot water and pomodoro sauce. Stir everything to combine.

4.Let the chili simmer for about 10 minutes to let the flavors blend and help the liquid thicken slightly. Taste the chili and add salt as needed.

5.Serve with your favorite chili toppings, such as hard cheese and cilantro.
